
I don’t have much going on today, which was planned. Hubs and I took Friday off to go hiking. That evening, we saw A Clockwork Orange at The Redford Theatre.
Unless you are familiar with Detroit (I’ll take a stab that most of you aren’t), the Redford Theatre is a throwback of a bygone era. It was built in 1928, and it’s been in continuous operation since. They were still producing silent movies when the theater was designed, so a giant pipe organ was installed. Now they play old movies and do an organ prelude and intermission show. I thought it was pretty cool that the organist did a lively rendition of Singing in the Rain. 😂
If you haven’t seen A Clockwork Orange, well… I won’t tell you that you must run out and see it. It’s not for everyone, but I think it’s a really good film. It says a lot more about society than just how violent and effed up people can be. Plus, Malcolm McDowell is phenomenal as Alex.
As for the rest of the day, I’m just catching up on laundry and a few oddball chores. I’m making a batch of peanut butter balls for Hubs. We have a deal. When I have to make the balls, he does the grocery shopping. That works for me. 😉
I’ve been making these balls for about four years. Hubs is a type 2 diabetic and it’s not easy to find healthy, low-carb snacks in this Twinkie and Pop-tart world. The recipe has been modified over the years, but this is essentially it:
- 2 cups rolled oats
- 3/4 cup unsweetened coconut flakes
- 1/2 cup Lily’s sugar-free chocolate chips
- 1/3 cup honey
- 3/4 cup of peanut butter
Mix all the dry ingredients first, then add the honey and mix until everything is coated. Then, mix in the peanut butter. Sometimes, I stick it in the freezer for twenty minutes because it makes it a little less sticky when you form the balls. No more than twenty minutes, though. Beyond that, and it starts to freeze and get crumbly. If it gets that way, simply wait about ten minutes until you can form balls. I just scoop some with a spoon and hand-shape the balls. I roll half the balls in a mix of cocoa powder and Swerve confectionery sugar (about 50/50) for a little variety.
Measurements are estimated. I don’t measure things like peanut butter (four healthy glops) or honey (three small puddles). If it’s too dry, add more PB. It it’s too goopy, add more oats.
